How meal planning works.

Before You Arrive

All your meals and non-alcoholic beverages are included in your stay. Before your trip, we send a questionnaire to learn more about your group’s preferences, including dietary needs, allergies and any Belizean dishes you’d especially like to try. Your chef reviews everything before you arrive so meals throughout the week are personalized from the very beginning. Our teams shops all the ingredients needed and everything is on the island when you arrive.

Your First Day

Shortly after settling in, your chef will sit down with the group to go over the week’s dining experience together. You’ll discuss breakfast times, lunches, dinners, snacks, boat days, slower afternoons, desserts, and any special requests.

Throughout Your Stay

Once the week is outlined, the chef prepares your meals around daily plans and activities. Breakfast has a variety to local specialties to try, lunches can be enjoyed at the house, on the boat, or during marine outings, and dinners are typically served family-style to bring everyone together in our central dining room.

The menu and timing remain flexible throughout the stay.

The Dinner Table

Designed to be the center of three family meals per day, the house has a round table that is not only wonderful for sharing meals, but is equal parts perfect for game night after dinner. The main table seats 8 comfortably, with space to add another table if your group is larger.

What a day can look like.

Breakfast

Start the day with fresh coffee, tropical juices, and a relaxed island breakfast overlooking the Caribbean Sea. Guests might enjoy fluffy Belizean fry jacks with eggs cooked to order, crispy bacon, refried beans, fresh fruit, and local jams, or a seafood omelet filled with shrimp or seasonal lobster. Breakfast menus rotate throughout the stay, blending Belizean favorites with American and Yucatán-inspired dishes.

Lunch

After a morning on the water, lunch may feature fresh tostadas, Belizean panades, or grilled Caribbean chicken sandwiches served on freshly baked bread. Traditional Belizean rice and beans with stew chicken and fried plantains are always a guest favorite, and if the group returns with a catch from the day’s fishing adventure, the chef can prepare fresh fried fish right at the house. For guests spending the day exploring, packed boat lunches are prepared.

Evening Snack & Daily Sundowner

As the evening winds down, guests can enjoy an evening snack such as fresh ceviche, chips with house-made salsa, tropical fruit platters or mini fry tacos.

Each evening, guests are welcomed to relax with one complimentary Belizean rum sundowner while enjoying the sea breeze, sunset views, and another beautiful evening on St. George’s Caye before dinner.

3-Course Dinner

Dinner at Casa Al Mar is served family-style and designed to bring everyone together after a day of adventure. Each dinner starts off with an appetizer such as conch fritters or roasted street-style elote, followed by entrees like Coconut Curried Shrimp, Grilled Pork Chops with pineapple salsa, or traditional Mayan-style Pibil served with handmade tortillas and fresh toppings. Desserts rotate nightly and feature tropical fruits, coconut, chocolate, or Belizean-inspired sweets.

Drinks

Included in every stay is: water, coffee, tea, juice and standard soft drinks.

Alcohol is optional at Casa Al Mar and is not included in your stay. There are a few options guests can chose from if they want alcohol.

  • For beer, local rum and wine, Casa Al Mar can purchase this in advance and have it available at the house on arrival. Beer must be ordered by case of 24. Wine and rum can be ordered by the bottle. Our team can send you a list of available options.

  • For other liquor, guests can purchase duty free alcohol such a whiskey, vodka, gin or champagne at Belize’s International Airport. Your bartender will happily serve your cocktails for you.

The cooking is fresh and local. This phrase carries real meaning in Belize.

Fresh & Locally Sourced

Whenever possible, meals are prepared using fresh seafood from local fishermen on the island, seasonal produce from Belizean markets, and traditional seasonings sourced locally. Before arriving on the island, the chef shops in Belize City to be ready for your group’s stay. There are no grocery stores on the island, so everything is procured and transported before your arrival.

Seasonal & Flexible

The menus at Casa Al Mar are inspired by what is fresh and in season in Belize at the time of your visit. Rather than relying on imported ingredients, the chef works with local availability to create meals that are authentic and flavorful.

Not your Traditional Restaurant

The kitchen is not designed as an à la carte restaurant with every ingredient always on hand, the experience is centered around creating well-prepared, personalized meals throughout the week. Rest assured we always have the main essentials readily available.

Frequently asked questions about meals and drinks

  • Yes. A private chef cooks three daily meals plus snacks for all guests, included in every stay.

  • There is no fixed restaurant menu. The chef plans the week prior to arrival after our reservations coordinator collects all your dietary information. Meals are a fusion of local cultures and flavors of Belize. The chef adjusts to dietary needs of those in the group.

  • Yes. Vegetarian, pescatarian, gluten-free, dairy-free, and common allergies are handled when noted at booking. We must be notified at least 3 weeks in advance of your arrival to plan. Strict medical allergies must be confirmed in advance because some specialty ingredients are limited on the caye.

  • No. Non-alcoholic beverages are included. Alcohol can be pre-stocked at cost or brought by the group. Purchasing duty free alcohol in Belize’s International Airport is encouraged. Our bartender will serve your drinks at no additional cost.

  • The kitchen is the chef's. Guests who want a snack at off hours are welcome, and the chef can leave items out. Casa Al Mar is not a self-catering rental.

  • Non-alcoholic beverages are included such as: purified water, coffee, tea, fruit punch, and soft drinks.

Special Meals

Special Celebration Dinners

Every meal at Casa Al Mar is special, but each group stay also includes one special outdoor dinner, either as a welcome celebration at the beginning of your trip or a farewell dinner before departure. For guests celebrating a birthday, anniversary, family milestone, or other special occasion, our team can often incorporate those details into the evening when shared in advance.

Set beneath the stars on the front lawn, the dinner features a beautifully arranged table, string lights, and a relaxed island atmosphere. It is one of the most memorable moments of the week.

Beach BBQ Experience

For groups looking for something a little different, a private beach BBQ may be available during your stay. This experience takes place on a nearby beach and includes transportation, setup, and a freshly prepared barbecue meal in a unique waterfront setting.

Because beach access can be affected by weather, tides, and cruise ship activity in the area, availability must be discussed and confirmed in advance. When available, the Beach BBQ can be added to your stay for $25 USD per person.
